What to Eat in Gaziantep

Gaziantep is the heart of Turkish kebab culture and a UNESCO City of Gastronomy. If it's your first visit, this short guide covers the dishes worth planning your meals around — and where to try them without the guesswork.

  • Basic English spoken

1. Küşleme

The softest, leanest cut of lamb, char-grilled over ember until it melts in your mouth. Gaziantep's most refined kebab and the dish to try first — this is what we're named after.

2. Simit Kebab

Lamb kneaded with fine Antep bulgur, giving an aromatic, textured bite you won't find outside the region. A true local specialty.

3. Antep Lahmacun

Paper-thin, crispy flatbread with a lightly spiced minced topping. Squeeze lemon, add parsley and onion, roll it up. Perfect as a starter.

4. Ali Nazik & Aubergine Kebab

If you love smoky aubergine, these two show off Gaziantep's way with vegetables and lamb together — one over garlic yoghurt, one skewered with the meat.

5. Katmer

The finale: a paper-thin pastry filled with local pistachio and clotted cream, baked and served warm. Great after dinner — or as breakfast, the way locals eat it.

Where to try them

At Şehr-i Küşleme in Şehitkamil you can taste küşleme, simit kebab, Antep lahmacun and katmer in one sitting — halal, family-friendly, with parking and card payment. See our Gaziantep küşleme page or the full English menu.

Frequently asked questions

What is the one dish I must try in Gaziantep? +

Küşleme — the tender, lean cut of lamb grilled over ember. It's the local benchmark and what Şehr-i Küşleme is built around.

Is Gaziantep food very spicy? +

Not necessarily. Many dishes like küşleme, plain mince kebab and cheese pide are mild. Spicy options such as Adana kebab are clearly separate, so you can choose your heat level.

Is the food halal, and is there parking? +

Yes — our kitchen is halal, no alcohol is served, and parking is available as we're inside the Metro Market complex.
