What is küşleme?
Küşleme is prepared from the most tender, lean part of the lamb. Grilled at the right ember temperature, it turns silky and falls apart with almost no chewing. It isn't buried in spice — the natural flavour of the meat leads. In Gaziantep, the home of Turkish kebab culture, küşleme sits at the very top of the kebab table, and it is the dish this restaurant is named after.
Why Şehr-i Küşleme?
The meat is hand-selected and prepared daily. Each küşleme portion is about 150 g, sealed over high ember so the juices stay locked inside, and served hot with grilled tomato and pepper, sumac onion and warm lavash. You can have it plain or lightly spiced with Antep spices. The kitchen is halal, the atmosphere is family-friendly, and no alcohol is served.

If it's your first visit, start with küşleme, then add a few crispy mini lahmacun and a spoon salad. For something more aromatic, try the simit kebab (lamb kneaded with fine Antep bulgur).
